The Food Diaries July 9-15

Hey y’all!! I’m so excited to start a new series on my blog called The Food Diaries. Eating healthy sounds a lot harder than it really is. I remember when I started my health journey I thought “healthy food” was bland and boring. Man was I wrong!!! I love trying new recipes and of course I have my cheat days, which I will always include… remember it is all about balance. Here’s a glimpse of what I ate this week.

AVOCADO TOAST

This is one of my breakfast staples. I’m always trying new toppings and seasonings, but my all time favorite is this little combo. I found this great quinoa bread at Kroger by Simple Truth, but I also love using Ezekiel bread. I toast the bread for about 2 minutes. Then, I add half an avocado to the toast. I usually throw in some onions into the mash for some extra flavor. Then the secret game changer that will take this baby to a whole new level….THE EVERYTHING BAGEL SEASONING from Trader Joe’s. This adds all the deliciousness of an everything bagel without any of the guilt. Then to top it off I add some homegrown sprouts. Get creative and enjoy guilt free toast that will start your day off right. Avocado is full with healthy fats and omega-3s. I personally like to have good sources of fat in each meal, since it keeps me fuller for longer.img_6180.jpg

ACAI BOWL

I finally found the Acai packets in my area and ever since I’ve been hooked on the sweet treat. Acai is one heck of a super food and if you get the unsweetened packets it contains 0 grams of sugar. I let the frozen packet thaw and then throw it in the Vitamix along with frozen bananas, frozen strawberries, a scoop of maca powder (great for balancing hormones and acne), a scoop of cocoa powder, and a splash of coconut milk. It blends into a thick milky goodness, that I pour into a bowl. Then it’s time to get creative with the toppings. My go to’s currently are raspberries, chia seeds, unsweetened coconut flakes, Love Crunch Dark Chocolate granola (which should be named crack because it’s so addicting), and a huge drizzle of almond butter!! I have this for dinner sometimes or a dessert. It’s surprisingly very filing.img_6183.jpg

KOMBUCHA

I try to make it goal to drink half of one of these a day, but sometimes I either forget or end up chugging the whole thing in one sitting. If you have a Costco membership they finally have these in a pack of 9, and they are a tad cheaper. Kombucha is filled with probiotic which are essential for a healthy. I also feel like it’s the perfect thing to drink when ever you’re feeling you need to de-bloat.

CHEAT DAY!!

Monday was my bff’s birthday, so of course that was going to be my cheat day for the week. If you are ever in the Nashville area you NEED to go The Pharmacy. They have some amazing burgers. I of course went for one of their veggie burgers. I got the falafel burger, a side of sweat potato fries, and root beer (I never drink soda but their root beer is amazing). I enjoyed every single bite.FullSizeRender(1)

A HEALTHY MEAL OUT

I try to eat at home as much as I can, but its impossible to do all the time. One of my favorite places to eat out at is Chipotle and it can also be healthy. I order a salad bowl, making sure I”m getting my greens in. Then I top it with Sofritas, grilled veggies, brown rice, black beans, tomato salsa, and corn salsa (I skip out on the cheese and sour cream). With all the salsa you don’t even need the salad dressing. I ate half of the salad and saved the rest for lunch the next day.

This is not everything I ate, just a glimpse. My goal is to show you that eating healthy can be simple and of course yummy. I will try to do this weekly as much as I can.
